Ingredients


1 bunch collard greens of great


1 onion


1/2 cup cider vinegar


Salt


ground black pepper


2 large shank


1/2 cup water


Directions


1. wash the Greens collard thoroughly to remove all traces of dirt and grit. Use a knife to cut the leaves from the stems, if the stems are thick and discard stems. Otherwise, just Cook the stems with leaves.


2. Chop the onion and sauté with a small amount of cooking oil in a saucepan. Add the ham hocks and cook for about 5 minutes.


3. While you are cooking with pork, stir a teaspoon of salt and 2 teaspoons black pepper together in a bowl or measuring cup. Pour into a dish.


4. Add collard greens a handful at a time, stirring well every time.


5. After all the beets were added to the pot, mix until the Greens look wilted. Then, turn the heat down, cover the pot with a lid and allow to simmer for about 2 hours, stirring occasionally.


6. remove from heat and serve.


Tip: the broth from cooking pot left beets is called pot or pot likker liquor in the South and is very nutritious. Do not waste it! Added to other dishes, or just sop with corn bread. Delicious!
